Introduction

Health was one of the most promising food trends of the past 10 years. In a difficult economic environment, the crisis leading to arbitrage by consumers, the past year has experienced a rise of Naturalness and sustainable development; two trends that cut across the health products market (Young, 2000).

History of Human Diets

It seems that some hominids (Spain, France and Germany), as Homo antecessor, practiced cannibalism. From a small niche market arising from a backlash to conventional agriculture that gained momentum from the environmentalist movement in the 1960s and 1970s to what has become mainstream to our understanding of food; green diets and nutrition has grown to a prominent place in our culture.

The chances of any individual organism being preserved as a fossil are very small, and the possibility that paleontologists can learn the specific dietary preferences of a fossil organism may seem even more remote. This is probably true of the majority of extinct organisms, although there may be enough evidence to determine general feeding patterns or preferences. But there are also cases where the evidence is so strong that the food items of an organism can be identified with a high degree of confidence (Lyle, 2010).
