Terms of Reference

Adequate food of man is one of the most significant problems that humanity can face. Population growth and population concentration in large urban agglomerations, where it is not possible to produce raw materials, have imposed the need to increase livestock farming, moving it away from areas of consumption, subjecting their products to store more or less prolonged. These circumstances created the need for development of processing industry staples to meet the needs of consumers, requirements becoming more selective and sophisticated. Currently the industrial processing of foods derived is one of the most important marketing in most of the centers of consumption (Robert 1999, p. 124).

The food industry has become one of the more of today, dealing with the development and Centralized packaging of food and provides employment to an important part of the population. It must meet semi-prepared food growing demand for the rhythm chords of modern life, without losing sight of what needs composition is produced, quality, purity and / or nutritional value appropriate.

Within this scenario, Asia would be able to be among the major world producers of food due to the abundance of raw materials as is currently the eighth largest exporter of food (Drew and Lyons 1988, p. 15). For these comparative advantages are transformed into competitive need adequate technology support allows the optimization of performance and maintenance of a high quality products to supply the demand crescent markets.

The food technology was mainly in the advances in basic sciences such as physics, chemistry, mathematics and biology. These sciences are, therefore, of fundamental importance to human resource training highly trained to deal with the problems due to the development, preservation, transformation, storage, quality control, supply and marketing of food.

Methodology

The most popular research approaches used to make informed scientific decisions include qualitative and quantitative methods. Differences between quantitative and qualitative research lie in their approach to identification of the research problems and reviews of the literature. The two approaches have different strategies in specifying the purpose, data collection, data analysis, reporting, and evaluating research. In identifying a research problem, Seaman (1995) claimed that it is descriptive and explanatory for quantitative but exploratory for qualitative research (p. 36).

Qualitative research explores a given phenomenon in order to provide further understanding and enhanced knowledge. Qualitative research questions are generally broad and the numbers of subjects in the study can be small. In qualitative methods, the researcher depends on the observations or experiences of the participants. Seaman (1995) stated that numeric data and analysis through statistics formed the basis for quantitative research. Questions were more apt to be specific and involve large numbers of participants. Statistics allowed the researcher to recognize trends and ultimately find ways to explain the relationships of the subjects to the element studied, or vice versa.
