Introduction

The foods we eat are chemically complex and must be reduced by simple chemical forms body to be absorbed by the intestines and transported in the body by means of the blood to cells. These substances are called nutrients, and they provide us with energy and substances that are essential to build and sustain human life. Therefore we must understand then that our bodies perform two important functions known simply as Assimilation and Elimination.
