Introduction

Globalization has changed the lifestyles of tourists worldwide as they can now experience new avenues in every sphere of life and their demands of recreation and spending a quality time is increasing more and more. In this regard, the food and beverage industry of every country is trying to incorporate newer and more innovative concepts and designs to the restaurants and hotels in this ever-increasing and competitive market (Robson 1994, N.pg).

In the contemporary hospitality industry, a massive hotels and restaurants are being constructed every year, so there is a growing requirement for the hoteliers and restaurant management to integrate ideas which are beyond the traditional and conventional ways. This especially pertains to the food and beverage business which attract a lot of customers (Ward 1992, 111-119).

This is primarily because people not only want to savour their food but they want to have it in a comfortable and enjoyable environment wherein they can have a quality experience which can be worth their money. This paper evaluates the different designs and concepts which food services operators apply to their business in order to enhance the quality of their service which can assure customer satisfaction.

Food Trend in UK - a historical brief

The current economic recession has affected all the businesses across the globe, and the food service providers have faced many challenges too. There have been new trends in the hospitality industry with regard to the economic slump, so all the known and renowned eateries in the UK are focusing on food as well as their prices (Morrison & Laffin 1995, 26-31).

Historically, restaurants in UK have been focusing more on food from other countries, like Chinese, Cantonese and Indian food restaurants. This is especially seen in cities like London, Liverpool and Manchester where there are oriental restaurants as well as entire areas solely for Chinese restaurants. The focus had never really been on English food in the past, so it is now taken as a creative new trend by many restaurant managers. Indian food is also very popular in the UK, and most towns have at least one Indian restaurant. Owing to this trend, the 'chicken tikkah masala' has become widely popular among the British people. This is clearly reflected from the fact that all the supermarkets in the country offer Indian meals. This trend clearly proves that the British palette has become accustomed to various tastes and that British people love to try new types of food to give a completely new experience to their taste buds.

People these days are looking for better options for luxurious lifestyles and application of modern technology in every aspect of life.
