Introduction

Nutrition science is responsible for studying and maintaining the homeostasis of the organism at the molecular and macro-system, ensuring that all the physiological events is carried out properly, getting adequate health and preventing disease. Macro-processes are related to absorption, digestion, metabolism and elimination. The molecular or micro processes are related to the balance of elements such as enzymes, vitamins, minerals, amino acids, glucose, chemical carriers, biochemical mediators, and hormones and so on. Nutrition is the science that studies the relationship between food and health, especially in the determination of a diet (Berg, Tymoczko, Stryer, 2002).

Goals and Objectives

The goals and objectives of this paper is to emphasize on the importance of providing nutrition education within home health population to the elderly people, in order to create awareness of the existence of a link between diet and health and the importance of risk factors, due to a diet too rich and not well balanced with respect to certain diseases (cardiovascular diseases, cancers, links to obesity and tooth decay) (Berg, Tymoczko, Stryer, 2002). It is also important in order to gain some knowledge simply to fight against the many misconceptions and to avoid imbalances too large (too much sugar, too much fat, not enough fiber): classification of foods, different origin of foods, balanced diet, Role of foods, some foods are better than others for health (Berg, Tymoczko, Stryer, 2002).

Theoretical Rational

The formation of good eating habits is an excellent tool for preventing disease and promoting health in the elderly population, as they are most sensitive to diseases. The best way to achieve an adequate nutritional status is to incorporate a wide variety of foods to the diet daily and weekly. Improving the nutritional status of elderly is possible through planning food and nutrition policy in line with the reality of each country to strengthen its action through educational strategies aimed at promoting good health and nutrition. This is in fundamental actions to ensure food security (Pattison, Symmons, Lunt, 2005).
